A connoisseur’s favourite quail is a succulent, low-fat game bird. Although small, the eggs are packed with vitamins and minerals and have a higher proportion of yolk to white compared to a hen’s egg. They make wonderful bite size scotch eggs and are tasty treats added to tartlets, a fish pie, salads or used as a pizza topping. They can be poached in minestrone soup, are great with celery salt as an appetizer and work well when used in tapas and on canapes. Alternatively, just boil a couple for 30 seconds and have for breakfast and serve with bacon and sausage.
